REAL MOMS REAL FOOD May 2010

The following recipe was so simply yummy to me (less enthusiastic but good reviews from James and Morgan, Audrey liked the deconstructed version well enough) that I made time to post. QUINOA SALAD WITH CORN, EDAMAME AND AVOCADO. Quinoa is one of those good for you foods (I think) and the triple rinsing really made a difference – it got rid of the bitter aftertaste I remember from the last time I made quinoa. It was also great left over. Then we had a lovely steak salad tonight with salad dressing that James made up years ago. The amounts are VERY approximate, as he doesn’t tend to measure. Enjoy!
