HOMEMADE WHIPPED CREAM

1 cup (or more!) heavy cream
2 tablespoons sugar, confectioner’s sugar, or maple syrup
1 teaspoon vanilla

Put cold cream in chilled bowl and whip until thickened. Add sweetener and vanilla and beat until peaks form. Chill until ready to use. You may have to rewhip.
